This premium experience begins at 8:00 AM at the Adachi Fish Market, one of Tokyo’s most authentic wholesale markets. Explore the market’s inner workings, interact with local experts, and hand-pick the freshest seasonal seafood.
On the way to our studio, we will take a scenic route through Kappabashi Kitchen Town, the world-famous district for professional chef tools. Your instructor will introduce recommended shops for high-quality Japanese knives and traditional kitchenware.
The journey culminates at the Chagohan Tokyo studio starting at 10:00 AM, where you will transform your market finds into a masterpiece. Featuring world-renowned “Yamayuki” Bluefin tuna, you will master the art of sushi from “Shari” preparation to the delicate “Kote-gaeshi” shaping technique.

Start of the studio session. Grill your own Dashimaki omelet using traditional tools. Followed by a filleting demonstration and practicing your own slicing skills with the Yanagiba knife using the market-fresh fish.

Learn the “Shari-kiri” technique to season sushi rice with the perfect vinegar balance. Then, master the “Kote-gaeshi” shaping technique to carefully craft each piece of Nigiri.
